Works For Me Wednesday


With Thanksgiving tomorrow I know many of you have already decided on what you are making. I made the fatal mistake of trying to go to the grocery store last night to pick up a "few things". $100.00 later I walked out with enough stuff to make desserts and side dishes for a small country.
That aside, I wanted to share one of my quickest, easiest, best recipes for a side dish if you are still trying to think of something to bring. It costs less that $5.00 to make and there are never any leftovers. My co-worker gave me this recipe last year, I believe it is from a cooking show but I don't know which one.

Corn Casserole
1 stick butter
1 package Jiffy corn muffin mix (the little blue box)
1 can cream style corn
1 can whole kernel corn (DRAINED)
Salt and Pepper for taste

Melt the butter in the microwave and mix in the corn muffin mix. Add both cans of corn and stir well. Add salt and pepper for taste. Put in oven at 350 degrees for 30-45 minutes. It will be done with the middle is firm.

For those of you who want to get away from the whole green bean casserole boringness I also have my Mom's broccoli casserole recipe to share.

Broccoli Casserole
3 lbs broccoli crowns
2 cans cream of mushroom soup
4 eggs well beaten
2 cups grated sharp cheddar cheese
1 med. onion chopped fine (1/2 to 2/3 cup)
1 cup mayo
2 cups herb stuffing mix
butter

Cook broccoli (not too soft, leave a little firm). Place in 13 x 9 pan. Combine eggs, soup, cheese, onion, and mayo and pour over broccoli. Sprinkle with stuffing mix and dot with butter. Bake at 350 degrees until bubbly (about 30 minutes).

hmmm...ya know, I'm not a big fan of brocolli, but that casserole sounds like it could change that - it sounds very yummy!
